To me it's a little high in carbs. Unless you count it as your fruit serving too..

Did you ever make the recipes for muffins in the recipe club or with the Dukan Diet pancake mix? You get three muffins for one serving. It includes your protein and fruit, but it is three muffins...
Nevermind, it's not that high in carbs. I was looking at the 68g of carbs and forgot you said for 3 muffins..
Sounds good. I make something similiar with pancake mix and 7 mini chocolate chips (free food) and a little Walden Farms chocolate syrup. Sometimes I use chopped walnuts for my fat serving...

Janet's Fruity Breakfast Muffins Category: BreakfastThis wonderful breakfast recipe comes from NutriSystem member Janet W., who says, "It makes a breakfast that is easy to take with you. And for those of us who are not morning people, you can have one muffin first thing to take vitamins with, eat one in the car, and have one for morning break.".
Makes 6 muffins; one serving is 3 muffins and counts as breakfast entre + 1 dairy/protein serving + 1 fruit serving.
2 packages NutriSystem Pancake Mix.
Splenda to taste (usually equivalent to 2-6 Tablespoons depending on tartness of fruit).
2 servings (usually 1/4 cup total) dried fruit, chopped if necessary (see Janets suggestions below).
Cinnamon, nutmeg or other spices to taste (optionalsee Janets suggestions below).
1/4 tsp. baking powder (optionalmakes muffins fluffier, but works without it).
1 carton light vanilla yogurt.
1/4 tsp. vanilla.
Splash of fat-free milk or Torani sugar-free syrup (to get a batter like consistency).
Preheat oven or toaster oven to 350..
Spray 6-cup muffin tin with non-stick cooking spray..
Mix all ingredients together and divide evenly into muffin tins..
Bake 22 minutes..
Tip out of muffin tin and let cool briefly..

Above is the basic recipe, but I have substituted different flavors of yogurt and extracts for variety. My favorites so far:.
Vanilla yogurt with almond extract, shake of Molly McButter, and dried cherries.
Lemon yogurt with blueberries (I added about 1/4 tsp. Crystal Light Lemonade Mix for extra tartness and used frozen blueberries; juicy and messy but delicious!).
Peach yogurt with chopped dried apricots.
Apple turnover yogurt with dried cranberries and lots of cinnamon.
You can also use fresh fruit but these may need extra time, as they will be more moist..
I usually put the dry ingredients in a bowl the night before, so in the morning, I can just add the egg, yogurt and vanilla and theyre ready...
