That sounds good, but I am finding that I can't eat that many more veggies as I am full. That would make a huge bowl of soup!!!..
I got two more of these in my accidental free week, and I had one, night before last. I dumped sliced mushrooms and chopped cabbage into a gladware container, spiced heavily with Mrs Dash Extra Spicy, garlic powder, Cajun seasonings, then covered and nuked for 4 minutesthe mushrooms release a lot of juice, which is a good thing. I dumped the stew over that and nuked again for a minute and added yet more seasonings. It was tremendous. And I am not a fan of this stuff, but dang, that was good...
I count this as my salad too with the cabbage etc. It does make a nice big bowl. Just depends on how much you put in it...
I add curry powder and raisins to mine and serve it on steamed cauliflower. Gives it an Indian taste. I like the beef stew as is too. You could also spice it up with green chile and salsa, Santa Fe style..

I eat it for lunch (skip the protein) with 1/2 cup canned fire roasted tomatoes added & a little McCormick's spice blend - usually the garlic & red pepper one. It's so simple yet so good...

I Dukan Diet Hearty Beef Stew.
1c ff, ls broth (I had chicken on hand but beef will work as well).
1/4c chopped green chili (fresh, frozen or canned) just what you have access to. Can make it as spicy as you want by adding some cumin or red pepper flakes..
Place all ingredients in sauce pan to heat on stove. When warmed to your liking place in soup bowl and enjoy..
If you have the luxury of an extra lgc this goes well with crackers. Could use one of the following 1/4c ff shredded cheese or ff sour cream...
