Quick question: What do you prefer: Dukan Diet Coke, Dukan Diet Coke with Splenda or Dukan Diet Coke with Lime? Thanks for any answer or 2. My other question... 2 oz Fiber Gourmet fettuccini.

1 oz panchetta-diced (I used Wellshire).

1/4c liquid eggs (I used TJ's).

1/2c boxed chicken stock (I used TJ's).

1 small shallot-diced (may sub 1-2T onion).

1 clove garlic-sliced/diced.

1T parmesan cheese.

Fresh parley.

Black pepper.

Cook noodles per directions. While noodles are cooking, fry panchetta until crisp. Remove panchetta from skillet leaving 'renderings' (fat) in pan. Add shallot and garlic to pan. Cook until soft and translucent. Remove shallot and garlic.

Add chicken stock to pan, scraping up any brown bits from pan. Simmer until reduced by 1/2. In a bowl big enough to accomodate the noodles mix eggs, cheese, and parsley. When stock reduces, add drained noodles and toss to coat. Add noodles to bowl, and mix quickly and thoroughly (the heat of the noodles 'cooks' the egg mixture), so the eggs don't scramble.

Top with additional parsley/cheese if desired..

The stats are as follows for the brands listed. Your stats may differ. This meal can be used for a lunch entree+protein, or a dinner entree. I also used it as a breakfast+protein..

234 calories.

3g fat.

42g carbs.

20g fiber.

24g protein..

Hmm... I need to find out myself. I don't know what is the right answer. I'll do some research and get back to you if I find an good answer. You should email the people at Dukan Diet as they probably could give you an answer..

I found the web site so I can compare the stats with regular whole wheat pasta..

It's available at netrition.com as well...cheaper than the fiber gourmet site, too...

Thanks Ted. I checked out the website but didn't want to have to order 12 bags just to try it out. I did find single packages at netrition.com (along with a bunch of other stuff I've been wanting to try)...

I was a bit leary about ordering 12 pks too, but I found it at a local health food store yesterday...then CG told me they sell it at netrition. The fettuccini is great, no 'whole wheat' taste (that I HATE), no funky texture. I REALLY like it a lot. It's a bit pricey, but I think worth it!..

Did you get the short fettuccini or the nests?..

All the store had was the short fettuccini...looks like egg noodles until you boil them...

Sharon, that looks GREAT! I don't have the Fiber Gourmet Fettuccini, but I do have their Mac & Cheese, and since the noodles are separate from the cheese sauce, I bet it's the same pasta, other than the shape. Of course, I don't have the panchetta, but that's easy enough to pick up. Now I'm really hungry!!!..

Pasta for breakfast.....a girl after my own heart!.

Loredana got me and my DIL's hooked on the fiber gourmet pastas, good stuff!.

Thanks for the recipe...

This recipe is so filling Ros! I was good for 5.5 hours!..

You can also customized your box at fibergourmet.com. One small box is 6 packages; it is more pricey but they also have flavored fettucini (pepper, tomato and spinach). So, no need to buy 12 packages..

Anywho, netrition.com is cheaper for the ones they offer..

The recipe looks great! Pancetta and a diet.... hmm.. a girl after my own heart.....

My Netrition.com order came tonight with the Fiber Gourmet pasta and Chef Jay's Lite Bites Cookies. I can't wait to try this pasta tomorrow...

I made this today for lunch, not exactly the same, but close. It was very GOOD. Thanks for idea Sharon!..

Thanks Sharon. I may just increase this recipe and try this out for my sister and her husband when they come over for dinner..

I still can't get her to come over to the Dark Side (NS) but this might show her that healthy food can taste good...

Carol,.

My Italian husband tasted it, and thought it was good. Those are the only noodles that he'll even taste, that aren't my homemade ones. It's a recipe with a real nice balance, I think your sister will enjoy it!..
