Ooohh...didnt think of that. I tried the Dukan Diet meatloaf stuffed into a bell pepper, that someone suggested, dont remember who, and that was great!..
I slice them long ways very thin on the Mandolin and use them for roll ups. I spread Laughing Cow or FF Cream Cheese, some finely diced cucumber, and green onion. Like Sushi without the Rice!.
I also shred it and mix it with some egg, diced onion and a bit of Low Carb Bake Mix for Zuchinni pancakes..
I know by the end of summer I'll be adding to the Chocolate Cake!..
I love zucchini fritatas. I chop up the zucchini and sometimes a little onion and cook in water in a non stick frypan until the water is gone and the zucchini is done. Then I whip some eggs and scramble them in the zucchini mixture. One of my favorite meals. Eggs and zucchini go really well together. I wish I had some oversized zucchini so I could make some pies.
I also use the big ones to make jam which is delicious..
I cut this recipe out of Cooking Light just yesterday. Sadly, I'll be paying .99 a pound for my zucchini..
3 small zucchini (about 1 pound).
3 small yellow squash (about 1 pound).
1 T EVOO (olive oil).
1/4 t. grated lemon rind.
1 T. lemon juice.
1/2 t. salt.
1/8 t. freshly ground black pepper.
1 garlic clove (minced).
1/3 c. thinly sliced fresh basil.
1 T. chopped fresh oregano.
1/4 c. (1 oz) shaved fresh parmesan cheese.
Shave zucchini and squash into ribbons using a vegetable peeler, stopping at the seeds; place ribbons in a a large bowl. Discard seed cores..
Combine oil, rind, juice, salt, pepper and garlic in a small bowl; stir with a whisk. Drizzle oil mixture over vegetable ribbons. Sprinkle with basil and oregano. Toss gently. Sprinkle with cheese. Serve immediately..
8 servings ( 1/2 c. veggies and 1 1/2 t cheese).
2.9 g fat.
2.8 g protein.
You could probably go to the Cooking Light website and find it. The picture was beautiful. I would probably use less olive oil and try the spray instead. Not sure what I'd do about the cheese. It seems like you'd have to have it but I don't know. I'd mess around with some reduced fat options..

Oh yeah, I have made the mock apple pie. Not bad. I could tell it was zucchini but it wasn't horrible. I slice it fresh and put it in salads like a cucumber. I also add it to a lot of the entrees, especially the tomato based ones...
I just posted a recipe under the Eggplant post, above. It works with all zucchini as well...
Shred it, squeeze out the water, and then freeze 2 Cup servings..
Pull out of the freezer and thaw to make zucchini bread around XMAS time. We give as gifts. And it seems to come out better using the frozen zucchini instead of the fresh zucchini..
Alsok I made a zuchinni, spinach quiche for dinner using my Dukan Diet scrambled eggs with sausage crumbles...

Stuffed zuch w/ lots and lots of mushrooms and crabmeat and some additional zuchs grated..
Zuch fritters - grated zuch w/ egg whites, some low fat parm cheese (don't have recipe handy, but I use amounts from a regular recipe). I have this amazing ScanPan that I can fry and brown in without fat. it's amazing..
Zuchini quiche - no crust..
I had a marinated zucchini salad at a restaurant last week - sun-dried tomatoes, rice vinegar, tiny bit of oil and julienned zuch..
Indian raita - the cucumber-yogurt salad works well with zuchs, too..
I'm also planning to just grill or dry saute' them and toss them into the chicken w/ dumplings, mac and cheese, and chicken florentine... been doing it with mushrooms all winter, can't wait to have zucchini and summer squash to add in - turn it into primavera!.
Added note: around here, local food pantries have asked gardeners to 'plant a row for the hungry' - so any zucchini and summer squash that threaten to take over the world will be gladly accepted and put to good use!! ours have mentioned that unlike friends and neighbors, they won't get tired of endless zucchini.....

Heart smart bisquick, egg beaters, paprika and garlic..
I used my Pampered Chef baking stone which really helped draw out the moisture. I sprayed it well with PAM, sprayed the tops well with Pam, baked at 400 degrees in the toaster oven, flipped once. They were awesome. I had to make about 3 batches, used 2 zukes..
Used about 2/3 cup bisquick (280 calories). Didn't worry about it since I did aroebics this a.m. and this p.m...
When zucchini is on sale I eat a lot of it, but I'm a simple girl. I chop them up and eat them like potato chips. I'll often eat 16 oz. or more at one time, but then, I replace the fruit servings with veggies so I can have that much...
I realize this is an older thread, but could you please post the baking instructions for the stuffed zucchini? Also the meatloaf stuffed peppers please?..
