First step, check out the online tracker or the written materials that came with your foods. Then you can expand on it from there.
For veggies, I use salads a lot with fresh veggies in the salad..
I'll add a hard boiled egg to the salad or some turkey/chiken breast or tofu many times to the salad for my protein at lunch time..
There are a ton of choices though, so don't worry about getting bored with it..
If you want to see what other folks are doing and have posted on this, click on the search tab above and type in your search(proteins, veggies, add ins or what ever you may want to search for).
It's a quick way to find more info.

For vegies I use Steam in the Bag frozen vegies, and I eat the entire bag with each meal(probably equivalent to two servings), but I only eat the "unlimited vegies", don't eat the entire bag of "limited vegies"..
Eggplant slice with tomato(unlimited), and low fat cheese melted on top(protein).
Proteins: I like egg whites with spinach,.
A boiled egg, fat free hot dogs, rotisserie chicken from grocery store, carbmaster yogurt(not all stores, I get them at Ralphs), and cottage cheese with a tsp of jelly mixed in.

If you look at the back of your planner that comes in your box of food you will find a list of all the grocery add ins and what a serving for each of them is. You can use this as a guide when you are shopping to help find appropriate foods and to encourage yourself to vary what you are eating. For the dairy/protein serving you can also read labels in the store to look for items that have 100 calories or less, 3 grams of fat or less and 7 grams of protein or MORE. You are allowed one NF yogurt a day that goes up to 120 calories.
Remember that salads are your friends. They will help to fill you up and provide lots of nutrients and antioxidents to your diet. And when you are hungry and have eaten all your foods for the day, they the unlimited veggies can be used to tide you over.
My favorite protein add ins are greek yogurt or carbmaster yogurt (when I can get it... I have to go to my parents to find a Kroger), canned turkey or chicken to add to my lunch "soups" or cheesey mashed potatos and boca burgers. When I'm out and about I like hard boiled eggs and light string cheese. I also discovered some lowfat ((&% fat free) jerky when I left my parents without my evening dessert and needed something on my drive home. But you need to use that sparingly as the sodium content was really high & definitely affected my weigh in.
