Well Lynn ... I usually have a boatload of banana peppers ... but now that I'm in a townhome ... no garden for me ... but you could send them my way ... I use to cut them up and package them for the freezer so that I could quickly add them to dishes like chili or casseroles, egg dishes ... yummo!..
I'm thinking I might try canning "jarring?" them. I've never done any canning so I'm sure I'll make a huge mess !!!! When they say to hot boil them for 10 min - does that mean after pouring the boiling brine water into the jar and sealing them, I then put the whole jar in boiling water for 10 min. Can you tell I'm going to suck at this !!! :-)..
Yes that is right. Hot jars, hot liquid and peppers, put on lids (hand tightened). Stand them upright in a large pot. Be sure the whole jar is covered with water. Boil the water about 10 minutes. Remove jars, don't tip them or jiggle them.
It isn't hard just time consuming...
You can also make stuffed peppers out of the ones you do want to use now...the Dukan Diet risotto is good in a stuffed pepper and I've also filled a pepper (and tomato, cantelope, etc) with chicken or tuna salad for lunch. My aunt makes cheesy stuffed peppers which are NOT Dukan Diet friendly but if you use FF cream cheese and FF cheddar cheese, it can be Dukan Diet friendly! Just mix the cheeses, stuff pepper(s), and bake for about 10-15 min until the cheese is all melty/gooey. YUM!..

For canning help, usually your county extension office has good directions and links to buy supplies. If you're a big gardener, you should get a canning kettle. It has a rack to hold all the jars upright and lift them out as well. My grocery store carries all the jars and rings and things. I found a lot of instructions at a site called.
