My Husband was diagnosed with Celiac disease this Spring. I have been trying to cook meals that will help us lose weight, yet taste good on this new diet. When He was first diagnosed, I had been cooking many wonderful whole grain meals, and now it's Gluten free. Non of the gluten free breads taste good (I've even tried to bake my own) I've been using Corn Tortillas (Making my own), but it's not the same. Gluten is in EVERYTHING! I have come to the conclusion that a meat, vegie, and potato are what I have to serve, but I'm gaining weight.

Is there anyone else out there with this problem? Any suggestions?..

If your husband has Celiac's I am surprised he is over weight. My neice has it and until she was diagnosed, she was malnourished. Lost her teeth and was anorexic looking. Could not get pregnant and had a miscarriage when she did. After she got on the diet, she gained weight and even had a baby.

I even saw some good sounding recipes on the Betty Crocker site...

There is a Gluten Free Mall on the internet. That's the name. You will find lots of products there. I have 2 grand children with Celiac. It is overwhelming at first and you are right that gluten is in everything. That includes some antibiotics, catsup, mustard, candy etc.

However you can get used to checking everything by calling the cs number you will find on the product. There are more gluten free products available every day. You are right about the bread. It tends to be heavy but there are mixes you can use. More restaurants are beginning to have gluten free menus.

They have wonderful special menus that we can use. My daughter now has a business making very fancy gluten free cakes for birthdays, weddings, or just a great dessert, so it can be done. (No, they can't be shipped). I wish you well. Get a new toaster and new pans if you have non stick.

Gluten is our enemy and it is everywhere but it can be beaten and it is so worth it. Our little boys were so malnourished and sick and we didn't know why. They are great now and growing fast. Your husband will be so much better and this new way of preparing meals will become just normal. By the way, our boys had big swollen stomachs that made then look fat but it was malnutrition..

Wow! Thank you so much for the information. It does feel overwhelming.

My husband has been eating cheese and buttermilk to sooth his stomach. I think that is how he gained weight.

The problem we have been having with fruit and veggies and salad is that his stomach hurts so much, the thought of these high fiber foods makes him cringe. Maybe with time it will be better..

We do have gluten free sections in the stores, but it seems it is all the high calorie things like chips, and cookies etc....

He seems to be tired all the time. Maybe that has to do with the lack of absorption of nutrients. This is making me think, thanks...

He has been eating all the wrong things. I'll check out the Betty Crocker site, thanks. I think that over time, he learned to eat cheese, and steaks, and that "saved" him from the severe consequences your niece went through...

Celiac is more common now, or we are talking about it more. If the fiber is too much, switch hubby to V8 for awhile and gradually increase the fibrous veggies. Rice is also gluten free and I'm sure there are many pastas that you can purchase gluten free. I've seen a lot of gluten free foods at stores. You just have to watch the nutritional info and think outside the box some.

I don't know if you have a trader joes in your area, but that is a great place to go. They have brown rice pasta that tastes great!..

Yes - I have been relying on Trader Joes A lot. You have to go around with the gluten free list in hand, because it's all over the store.

I need to check, but my Husband had a terrible reaction to Campbells tomato soup, and we found out there is gluten in it. I'll have to check on V8..
