My son is vegan and he bought a spirrouli I think thats how you spell it... it cuts vegetables into ribbons.. flat like fettuccine or thin like spaghetti I made some tonight think spiraled zucchini then made my sauce when it was nice and hot I added it to the zucchini stirred it up and let it sit for a moment. It softened the zucchini just enough. I added a bit of parmesan to it because I love it.. wowowowo it was amazing! great texture!.

We bought ours online it was about 30 dollars.

Its nice when your 19 year old knows the healthy way to do things!..

I make this all the time...even when I was off plan for a year...I still had this for dinner about three times a month. It never gets old and it reheats great...

Lisa - How much sauce did you use vs. how much zucchini?..

I made this for my whole family so I used a big can of chopped tomatoes to start the sauce then added my usual stuff... garlic.. a little onion and seasonings. I used 7 zucchini spiraled like spaghetti. it's ok if it looks like it needs sauce.. the zucchini releases water and it makes it more saucy.

If I made this just for me I would probably use 2 zucchini and 1/2 cup sauce that would make the green portion of the meal... with a little parmesan sprinkled on it.

Ive also cooked it in a little vegetable broth about 1/4 cup and added 2 lite laughing cow cheese wedges to it and it was really good!.

Nice change for a side dish! Thats what we are having tonight with some grilled chicken...

Ooooh, I just checked out the Spirooli online (apparently the name has changed to World Cuisine something or other). It may have to be my next kitchen gadget!!!!.

Makes veggie "chips" AND noodles!.

I just use a Julienne Peeler. They're cheaper and take up less room.

If you haven't made the zucchini ribbons yet, try it!!! Everyone I've served it to (MFer or not) has loved it. It's so versatile, too. I'm so thankful for that recipe...

I have different peelers, and gadgets.. I have a well stocked kitchen... none of them get the same texture as the spirouli.. with a lot less waste.. one thing I want to buy is that titan peeler.. I saw one at bed bath and beyond..

And it looks like it does a lot!..
