I'm looking for creative ideas on how to make the Medifast scrambled eggs..

I tried the egg / soup = bagel. Are there any other suggestions? - thanks..

....see my post in "Can you have ham" in this forum section. I add a few cubes of ham, but only the good stuff...

Make sure you let them soak for a few minutes after mixing with water and cook them on the stove as you would egg beaters. There are also tons of recipes over on the mmm....recipe forum...

Soak for at least 20 minutes. Spray nonstick pan with PAM, cook..

I usually add a tablespoon or so of canned green chilis, and a little hot sauce. Also seasoned salt. If I'm feeling all daring and have a healthy fat, I might add cream cheese. YUM!..

Someone posted a recipe for eggnog... made w/ a pkg of vanilla pudding, 1/4 tsp vanilla extract, a pkg of scrambled eggs, and some cinnamon, and ice, in the magic bullet.... it makes 2 meals. I love it. Kinda like an eggnog frozen treat b/c the pudding makes it pretty solid...

I also make them as is - soaking helps - nuke in the microwave & add salsa when done.. tasty!.

One of my friends adds fresh spinach and mushrooms, and it's very filling...

I use the eggs in Banana bread, which incorporates the Banana pudding, eggs and Maple & BS oatmeal. The recipe's on this board somewhere. Very good! especially toasted. I can't choke the eggs down on their own.....

I made it with just one packet of Sweetleaf (stevia) b/c I didn't want it that sweet and it really did taste like eggnog!..

Thanks to all. The eggs by themselves are okay (as long as I am not having a hungry day).

I think I will be adding some spinach. The eggnog sounds like a nice change too...
