I too love this recipe, and almost always nuke fozen blueberries until they are hot and saucy to pour over the top..
If you haven't made this before, be sure you have lemon extract on hand, it really makes it yummy!..
Boy, does that bring back memories!!! There was a period when all posts were being censored for any words that might possibly be construed as dirty! It was done by computer, rather than humans, so it saw the letters TIT in the word substitute and *** them out!!! You couldn't write a word that ended in the letters SH and followed by the word IT without it all being replaced by ********!!! Man, it made for some interesting reading!!!..

Aaah perfect... just what I hoped to make for breakfast this morning with the wild blueberries we picked Sunday. I just made Shirley's Blueberry Cream Cheese Danish & it is decadent!.
What did you have?.
Could anything be substituted for the egg sub? or can it be deleted?.
I never buy that and would need an entire pkg. for only 1 tbs..
I suppose I could cook it for a protein ,if need be..

You can buy a canister of freeze dried egg whites, I forget what it is actually called, in the baking section. It should work well and it lasts forever, so you will have egg subs. for other recipes..

Phyllis, the egg substitute is part of the breakfast protein, along with the cream cheese, so if you delete it, you won't be getting a full protein. Plus, it kind of helps hold it together after cooking. However, you could use just an egg white from a real egg. That's what egg subs are, anyway!!..

Just bumping this back up to the top for those that might not have seen it before. I loved it every time I made it and then today I tried it with the blueberry pancake mix. YUM!.
I don't like using up my fruit serving in a breakfast recipe if I can help it (I spread that out as a mid-morning snack) so using the Dukan Diet pancake mix that already had blueberries was a neat option..
I make mine in two 3-4" nonstick pans, kinda like large muffins. I dollop the "cheese" filling into the middle on top of the pancake mix and it stiffens up just like two danishes! I can't believe this is only breakfast + protein!..

1 package Dukan Diet Pancake Mix 2 Tbs. Splenda.
2 Tbs. fat-free cream cheese 2 Tbs. fat-free sour cream.
1 Tbs. egg substitute 1/4 tsp. lemon extract.
Dash of vanilla extract.
Optional: 3/4 cup fresh or frozen (thawed) blueberries.
Mix Pancake Mix with 1/3 cup skim milk, per directions on package..
Add 1 T. Splenda and a dash of vanilla extract..
Spray a small oblong "au gratin"-type casserole (4 3/4" wide, by 7 1/2" long, by 1 1/2" deep) with nonstick spray..
Pour or spoon mixture into casserole. Set aside..
Mix cream cheese, sour cream, egg substitute, 1 T. Splenda, and lemon extract in a cup.
Or small bowl. Spoon cream cheese mixture onto top of pancake mixture, spreading it evenly over the top (or, depending on the size of your casserole dish, you can make little "wells" or "pockets" of cream cheese over the top)..
Bake in a 350-degree oven for about 15 minutes, or until pancake mixture is set. (Cream cheese mixture may still be a little watery, but it will set and be creamy when cooled.) If desired, top with fresh or frozen blueberries..
Counts as breakfast entre + 1 protein serving + 1 fruit serving.
(if blueberries are used for topping) + free foods..
