I made this morning for breakfast but used applesauce instead of pumpkin!!!.
I must say that it was soooo filling I have to save some for later this morning to eat it all..

OMG!!! Made this for breakfast today and it was divine! I used 1/3c Hodgson Mills Instabake in plave of the Dukan Diet pancake mix and topped it with FF cream cheese icing (2 Tbsp FF cream cheese, 2 Tbsp Cool Whip Free, a good squirt of lemon juice and a packet or two of splenda - counts as another 1/2 protein and a free food) - 2 people whom I don't know commented on how good this looked when they were passing by. So good that I just took another one out of the oven for tomorrow's breakfast.

Actually you don't have to count the 1/4 cup eggbeaters as any extra protein. If you were using the mix as pancakes, you would be adding 1/3 cup of FF milk, which you don't add as extra protein. The 1/3 cup of milk and the 1/4 cup of eggbeaters have aproximately the same stats...

Gwen: I just use a small pyrex bowl to fix mine. It comes out quite large. I put mine in the microwave for 7 minutes at 80% power and like the texture that gives it...
I used a Ramkin bowl. It is larger than a pyrex cup. I micowaved it for 3 min. it came out perfect!.
Hi Gwen! I use anything that will hold at least 10 oz. A cereal bowl, small pyrex bowl, even a 2 cup glass measuring cup will work...
I used this same recipe and added 1 cup of pumpkin instead of the 1/2 cup, and 1 tsp pumpkin pie mix instead of the spices, used low carb baking mix, and baked in the small springform pan for 20-25 min at 350 or until the top was dry to the touch. Then I chilled it, and it tasts just like the pumpkin impossible pie. My husband also loves it and he is not on a diet. Top with FF Reddi whip. It is really delicious!.
We would like to make the Pumpkin version tomorrow while at a birthday party while everyone else is having "their cake"... we can have "our cake".
You mentioned that you use 1 cup of Pumpkin rather than 1/2 cup... would I need to alter the amounts of any of the other ingredients since the original recipe calls for 1/2 cup applesauce?.
Also, I was going to cook it in a small glass ramekin. Would that work?.

Pam, you were right. It is delicious with 1 cup of the pumpkin. Tastes just like the impossible pies. Chill, top with cool whip !..
