That's the way I feel sometimes. This is a diet? I'm on half Nutrisystem and half my own cooking (my husband helps me eat the NS)..
So, last night I made curried shrimp with mixed vegetables and had some fresh loquats with it. Totally on plan, it was, and so lip smacking good, even though I made it myself, I couldn't stop yumming. I told my hubby I couldn't believe I was eating fattening foods all these years when I could have been eating stuff this yummy and staying slim..
NS has taught me so much about healthy eating, stuff I thought I already knew, but evidently I didn't. The previous meal I made for us was was bison tenderloin with a few tiny fingerling potatoes, and a small salad. The bison tenderloin was so darned good, lean, tender, and tasty..
Then there is the Nutrisystem lasagna and ravioli, the tacos, the hamburger, etc., etc. Indeed, this is a diet? I've never eaten so well and I'M LOSING WEIGHT doing it...
Hey John, which one do you want me to add to the recipe pages, the lasagna or the pizza/dessert? The pizza/dessert was not my creation, I got it here searching for the recipe, not sure who created it, but I'm so thankful! Here it is if anyone wants to take credit for it.
Eggplant Parmesan with Apple Crumb Pizza for Dessert You will need:.
1 small eggplant.
1 Nutrisystem pizza with cheese.
1 small apple, peeled or not your choice (Oh yes... you can use a peach, pear or other fruit if you wish!).
A bit of Splenda.
A bit of ground cinnamon.
1/2 package of Nutrisystem granola.
I Can't believe it is not butter spray.
Slice the eggplant and brown it lightly in a nonstick skillet. Place the slices so they overlap in a pan lightly sprayed with nonstick cooking spray and spread with the pizza sauce and sprinkle with the cheese. Bake in a 350 F. oven until the cheese is melted and the sauce bubbly. Anywhere from 15-20 mins works for me. (It can vary depending on eggplant slices etc.).
For Dessert: Thinly slice the apple and arrange on top of the pizza crust. Spray lightly with the I can't believe it's not butter spray, then sprinkle with Splenda and a bit of ground cinnamon. Top with your granola and bake in the same 350 F. oven until golden. I hope you enjoy!!! (This is your dinner with a vegetable and fruit serving.).
By the way, I did NOT use the granola for the apple dessert found no need for it and had already had my breakfast serving of the day (nor did I want to give that up). It came out wonderfully yummy anyway!.
For the lasagna, basically you layer thin eggplant slices cut lenghtwise, chopped tomatoes, FF Cheese (I skipped the cheese to save my protein for later and replaced it with a bit of FF Sour Cream instead), then repeat it. (I also put a layer of mushrooms and spinach, and I guess you can put whatever you want!) Put on the oven for 350 degrees, for about 20 minutes or so (I kept on checking to see when it would be done). It comes out flatter than a lasagna since the eggplant loses a lot of water, but it was delicious and definitely filling. Servings will depend on how much you use of each I made it so that I would only have 2 TBSP of FF Sour Cream in each serving so that I wouldn't surpass my "Free Food" allowance. (Count as your veggies + 1 free food if done this way. If you use FF Cheese, then count your protein serving accordingly)..

JuneInTune I think that's why Nutrisystem is easy to stick with, the food doesn't taste like diet food for the most part! Yesterday I completed 5 weeks on Nutrisystem (10.5lbs down!), and when people were asking me I kept saying "I think it's been 3 weeks?" I had no idea it's been that long. That's a sign right? During most diets you're counting the days until it's over, here, time flies by and I'm not even suffering! Only came out of the diet twice, once for a wedding out of town, the other time for a friend's dinner (but didn't exaggerate in neither), and didn't feel guilty about it as I knew the next day I'd be right back at it!..
I believe it was created by either Breadstick or the Duchess of Diet at least the Duchess posted it in January 2005 along with a number of her own and others' recipes I've reposted it a number of times either alone or with other fun ways to rearrange the Nutrisystem pizza.
It IS a good one and definately a keeper.
