I did a search, but didn't find much help..

What do you do to help the Minestrone soup? I tried it once, a couple of months ago. I don't remember why I didn't like it, but I didn't. I'm determined to try it again, but I'm skeered ..

What are some things you do to make it better?.

I had it yesterday as I've been sick and wanted some soup and it sounded better than the split pea. I let it set about 5 minutes longer than called for (made it with the boiling water method) and then added a wedge of the garlic and herbs laughing cow cheese and stirred it up until it melted. It was good, even for sick taste buds...

I let everything thats freeze dried sit for a VERY long time after pouring boiling water on it, probably close to a half hr or 45 mins. i've found all of the food tastes much better when it's fully rehydrated..

I also let mine sit a bit longer with a little extra boiling water (I like it soupier). I occasionally add either stewed tomatoes or the ones that are diced with herbs added. I always add a little garlic powder, some no salt seasoning (I like the one from Costco) and then sprinkle just a bit of parmesan on top. Also, don't eat it out of the container! It looks much tastier when you eat it out of a bowl!..

The soup is great I normally add boiling water, let it sit out for about 15- 20 mins and it's GOOD to go. I also always use the inside guide on the container to ensure that I don't over water it!..

I add cooked veggies (usually broccoli) and a small can of low sodium V-8 juice. That is two veggie servings. Then add your protein - like chunks of ham or chicken. Thick, delicious soup!..

I have actually started using no salt added chicken stock to it, and my protein, either shrimp, shredded chicken, or today I added fake burger crumbles. The minestrone soup has actually become one of my favorites. I don't let it sit though. I find if I nuke it for about 3 minutes, it is cooked all the way through (noodles are tender) and it is perfect, but that is my microwave. Since all of them are different, cooking times are all different...

I had it today for the second time. First time around, it was very "thin" on ingredients, so this time I added my two vegetable sevings to it. You're right, it tastes much better in a bowl. I added 1/2 c cooked sugar snap peas, diced, and 1/2 c tomatoes. Much more satisfying.

Question, why is the fill line in these cartons so hard to find? It took me awhile to find it. I was expecting a legible line on the inside, not a groove. Now I just fill to about an inch from the top. Otherwise they boil over if you nuke them. Have to try the boiling water method...

I rehydrate it with half low sodium chicken broth and water. Let set for at least 15 minutes. While it is rehydrating I put some diced cabbage in chicken broth and microwave covered until tender. I add that to the rehydrated minestrone plus about 1/4 cup rotel. Then I microwave to reheat for about 1-2 minutes. It is one of my favorites.

I think the cabbage makes it seem less salty and bulks it up for a much larger lunch...

I usually let mine sit longer than recommended as well, I've also added spinach to mine...

I just add some garlic powder, black pepper, and a dash of Franks hot sauce. It is one of my favorite soups...

I had my plans for lunch today. Packed my shredded cabbage, chicken broth, (brought THOSE with me!!) and was ALL READY to try the Minestrone for lunch again. What did I do??? Ran off an forgot to bring the Minestrone!!! grrrrrrrrr.

Guess I'll have tuna, which is my back-up in my desk-drawer.

Minestrone for another day....
