I put it over a bed of lettuce. I like to take a veggie serving from dinner and add a tomato. Overall, I think it is pretty good...
I like it cold with the melba toast. But I liked the bread idea...might even be worth toasting up some rye.....
Actually to me it taste just like Mrs. Smiths chicken salad at the store. Well, I think that is the name. It isn't bad...
Don't be put off by how it looks. It tastes pretty good. One of my favorite lunches. I dump it in my tossed salad. and spread a few bites on melba toast. I particularly like it because I can bring it to work if I don't have time to pop home for lunch and can bring a tupperware container of tossed salad, a tiny cosmetic size plastic bottle of salad dressing and the chicken salad or tuna pouch and add the dressing and chicken at last minute before eating before rushing off to do errands during my lunch time..
Mmmmm chicken salad, is one of my favorite lunches...I usually dice up some green onions and pickles and mix it up, throw a slice of ff cheese on top, put it on some diet wheat bread that I toasted up and viola!...now I'm hungry..
I add a chopped hard-boiled egg (as my lunch protein) and serve it on a bed of lettuce..
I really like the idea of the green onion - will definitely add that next time too...
I like it too. Today I added extra chicken (for my protein) and celery and split a mini whole wheat pite apart and spread it on....yum!..
I like the pickle and hardboiled egg suggestion. Will try next time. Wish I had read the idea earlier. Today I crumbled up the melba toast like croutons to add to my tossed salad (lettuce, tomatoes, cucumber) and with the ff salad dressing, and tuna salad tossed in it was very good..
Here is my favorite recipe for this salad....
Barbara's Chicken Salad Supreme (from a past Newsletter).
Lunch serving, protein, fruit, plus free foods.
NS chicken salad.
1 oz chopped cooked chicken or 1 hard-boiled egg.
1 tbsp chopped peppers.
1 tbsp chopped celery.
1 green onion.
2-3 dried prunes chopped.
1/4 tsp or more grated orange rind or orange juice.
Add mild curry powder to taste (optional - about 1 tsp is good).
If you want to add your fat serving, add appropriate serving of nuts or avocado. Serve on a bed of mixed greens....
(I use alot of curry or I add fresh cilantro instead....
And I don't do prunes...so I add another fruit, (like 5 halved grapes or craisins).
I love curry so I add celery, cut up grapes, and 1/2 tsp of curry powder and dump the whole thing on a whole wheat roll with a slice of low-fat cheese...
After reading all the good ideas I'm really hungry for Chicken Salad. I'm definitely having that for lunch tomorrow. I always put it on toasted ww bread with lettuce, green onion, and tomato with a little black pepper but tomorrow I'm trying the boiled egg and pickle idea, yum!..
I love the chicken salad. But you have to store it in the fridge!.
I save my fruit servings and add either 1/2 an apple, diced &/or some halved grapes..
Or add a tsp or 2 of pickle relish..
Hardboiled egg white and onion..
Pineapple and almonds (fat serving from dinner).
Serve on whole grain bread, wrap, biscuits, or with whole grain crackers and a Big Salad..
I had the CS with relish on toast today for lunch. Kept me going until 3:30 and snack time...
