Ooops, I see this isn't the one with the pancake mix you were looking for but check her recipe collection and you'll find it in there. There is also one for cinnamon donuts and in the Puff thread you'll find cinnamon puffs...

1 Dukan Diet pancake mix.
1/2 c SF applesauce.
1/4 egg beaters.
1/4 tsp cinnamon and vanilla.
Equals Dukan Diet breakfast fruit and dairy/protein.
Bake 350 for 20 minutes!..
This is the recipe I have been using that was posted on the boards a few weeks ago. It has a cakey, not yeast roll, taste and texture, but you do get the cinnamon and could add raisins for your fruit to better duplicate a cinnamon roll....
Cinnamon Swirl Breakfast Cake by RGORAN2 (Ragini).
I took one of the recipes from the compilation that Lynn (GRAYLADY) made - the Banana Nut Bread - and tweaked it to make a Cinnamon Swirl Cake since I didn't have any bananas. OMG, it turned out SO SINFULLY DELICIOUS!! Here's my modification using the measurements from the original recipe:.
1 Dukan Diet Pancake Mix.
1 large egg.
1/3 C. Blue Bunny Carb Freedom Vanilla Crme yogurt (this is the brand I used).
1/2 tsp. vanilla (I eyeballed this since I love vanilla).
2 Tbsp. Splenda (or 16 packets).
Preheat oven to 375. Coat a 7 oz. ramekin (I use Corning ware) with non-stick spray. Mix the egg, yogurt, vanilla, and 1 Tbsp. (8 (6) pkg.) Splenda in a bowl. Fold the Pancake mix into the liquid mixture.
In a separate small bowl, mix 1 Tbsp. of Splenda and cinnamon (enough to blend with the Splenda to make cinnamon sugar). Sprinkle the cinnamon sugar evenly over the batter in the ramekin (leave just a little so you can sprinkle on the top). Spoon the rest of the cake batter on top of the cinnamon sugar layer and smooth out the top. Now use the remaining cinnamon/sugar to the top of the batter (this gives just a hint of sparkle and crunch).
*Counts as breakfast + protein; 216.5 Calories for cake alone using the ingredients I used (adjust calories for your brands).
It resembles a HUGE muffin, but tastes like a divine cake (unlike those microwave cakes, this one has the texture of a real cake)! You could probably decrease the Splenda, but I like my cakes sweet. Add your fruit serving to make breakfast complete. NOTE: Too sweet for me so I reduce the Splenda in the cake to about 6 pkgs. ajf..

1 pkg chocolate chip or regular Dukan Diet pancake mix.
1/4 tsp baking powder.
1 tbsp dark cocoa powder.
3 pkts Splenda.
1/3 c chocolate soy slender milk or chocolate calorie countdown milk.
1 tbsp PB2.
1/2-1 tbsp water (or just enough to make it the consistancy of peanut butter).
Preheat oven or toaster oven to 400 degrees. Spray a single serve casserole dish with cooking spray. In a bowl mix together all ingredients except for the PB2 and water. In a small bowl mix together the PB2 and the water until well combined. Pour the chocolate batter into the casserole dish. Drop the PB2 mixture on top and gently push it into the chocolate batter.
Spray with butter spray if desired. Serves 1 as your breakfast entree or dessert...

1 package NutriSystem Pancake Mix.
1 tsp. vanilla.
1 tsp. cinnamon.
1 oz. fat-free cream cheese.
Dash of cinnamon.
1/4 tsp. vanilla.
1-2 packets Splenda.
1-2 drops skim milk.
1-2 Tbsp. fat-free Cool Whip.
1 1/4 cup fresh strawberries.
Prepare NutriSystem Pancake Mix as directed, but add 1 tsp. vanilla and 1 tsp. cinnamon; make 3 pancakes..
Blend softened cream cheese, add a dash of cinnamon, 1/4 tsp. vanilla, Splenda, and just a drop or two of skim milk to thin it a little more..
Spread mixture on each pancake, stack them, and then top with fat-free COOL WHIP. Sprinkle with cinnamon and strawberries (optional)..

I think a lot of the individual recipes were gathered from her forum to make the cookbook, so this one might be on there. It is the "Apple Cinnamon Roll".
