Cleaning the closets would probably be wise - my fave consignment store had a Groupon offering this week, and so now I need to make room for whatever I end up buying with the multiple coupons I got. It's a good thing I can only use one per visit. Of course, they are good for a year but there is no way I can let them sit unused for long. To make things worse, the other good consignment store that has the dollar days is having one this weekend - I will try to resist, but not making promises. I have gotten $250 designer skirts with tags still on them for $1 in those sales. I really need an intervention...

I think my goal will be to go one week without a snack (other than a piece of fruit) after dinner. This has been my biggest problem area, and I need to test myself and see if I can be honest. So that's it....

(Oh yeah, I also plan to finish c25k, but that will be easy, since I just have one more run left.).

Why give up my vacation day? Well, a little emergency job came up and it starts on Monday, my vacation day. Boss said "you can come in for a few hours to get it started then take the rest of the day off".

An hour there, an hour back and a few hours of work? Does that sound like a relaxing day? Of course my phone would be ringing the rest of the day anyway. sooooo..

So Tuesday is Mardi Gras and I'm off then anyway... will see how many calls I get and maybe take off Wednesday.

Make a date with your DH to just talk. Tell him before hand that you want to talk and ask if he's able to put emotions aside for awhile and just listen to you. It's hard to keep your emotional intelligence when you're dealing something like this but it's usually worth it in the end if you can manage. {{{{{HUGS}}}}}.

I got up to make coffee and am now at my desk..

Theres barely even any room to work. Mail and papers piled up everywhere!.

I live in a working class 'burb, right on the border of an upper class 'burb, so when the border guards aren't watching, I sneak over to the great consignment stores - best one is less than 1/2 mile away. Most entertaining sale I ever went to though was when my BFF and I went to Newport RI for the day to tour the mansions (if you haven't been to Newport, google it), and a charity was having a clothing tag sale at one of the mansions that's not open for touring. When we walked in a very designer-like guy points to various areas, saying "the winter wear is in this room, the spring wear is down there, summer wear to your left, and the.

Low end.

Things like Ann Taylor, J Crew and Talbots are upstairs." They had really high end stuff for terrific prices, but I am not going to spend $50 for one high end designer item when I can get 5 or 10 Ann Taylor things for the same price (e.g., picked up an adorable Ann Taylor silk skirt for $5 there)..

I'm sooooo jealous! I love living here except for the lack of decent retail therapy..

I have to drive an hour+ for the really good shopping areas..

I've been to Newport. Dh's family is from CT. We used to take vacations to visit them and take a few days for ourselves during the trip. My favorite trip was to Watch Hill. Great place to sit outside, drink beer, and people watch..

Amazingly Gutter, I think I'm feeling pretty good today..

I have been up for over an hour, have not been short of breath yet even after doing steps multiple times. Already that's a slightly encouraging sign to me. I'm used to being a morning zombie who can't wake up and has been pretty weak and off balance..

If one iron treatment helped me out a little, imagine what 7 more will do. Not sure I'll have this level of strength all day but so far I'm liking it..

It has been very spring like... bordering on summer like. Temps got up to 85 once already last week.

As for patience.... I've been working in this industry for 27 years now... It won't change for anyone. Pays well but it's very unforgiving!..

Next week I go Mon, Wed and Fri. Still have to schedule the following week. They don't schedule too far in advance so they have a buffer for high priority emergency treatments...

My hair is a scary situation if caught in the rain!.

Worse yet, I havent had a hair cut since November!.

I was scheduled to get one the day I ended up in the hospital. I have trimmed my bangs though and some basic trimming. My hair hasn't been this long in like forever...

Here is the soup recipe. It was made with orange not lemon.....

Tthink it maybe Heidi Ho friendly !.

TOMATOE SOUP WITH ORANGE AND CUMIN serves 6 - yields about 10 cups..

1 small yellow onion(5oz) peeled & quartered.

2/3 cup fresh orange juice(from 1 large orange).

1 medium baking potato (9 oz) peeled and cut into large chunks.

1/4 cup unsalted butter.

1 Tbls. gound cumin (she only used 1/2 Tbls.) tasted fab..

2 - 28 oz. cans peel whole tomatoes with their juice.

1 Tbls. packed finely grated orange zest (from the orange, zest 1st before juicing it)..

Kosher salt and fresh gound pepper.

Snipped fresh chives for garnish.

Put the onion, orange juice, potato, butter, cumin, bay leaves and 3 cups of water in a large sauce pan. Cover and bring to a boil over high heat then reduce to simmer. Cook until a skewer easily pierces the potatoes(15-10 mins.) Add the tomatoes with their juices and the orange zest, bring to a boil, reduce the heat to maintain a steady low simmer, and cook, uncovered until the potato chuncks are falling apart, another 20 minutes. Discard the bay leavs..

Puree the soup with a hand blender, blender or food processor..

Stain through a medium sieve(colander works also), discard the contents of the sieve. Season with salt and pepper for taste. If not serving immediately, let cool completely before refrgierationg or freezing. Garnish with chives and sour cream and serve. This was paired with Hogue Sauvgion(sp) blanc. ENJOY..

Never ever thought I'd run to the corner mailboxbut the c25k program proves ANYONE can slowly and safely prepare to reach that goal. As I said, I'm not sure I am actually hitting 5k (I'm pretty sure I'm not) since my pace is so slow, but I'll get there. More important is the fact I'm running for 30 minutes straight without stopping or even getting out of breath. Yes, I get a bit clammy and I definitely feel it, but it's not as if I'm going to expire on the spot when I finish. I am scheduled to finish tomorrow (my run days are Sunday, Tuesday, Thursday), but I'll switch off this week and try to run today instead. I have to go out of town for business on Wednesday and Thursday, but I'll get back on schedule the following week.

As for snacking discipline, I'm fine ALL DAY, but then after dinner, I guess I just go a bit overboard. So If I put some super strict restrictions on myself, maybe I can regain some discipline. I'm also going to go back to buying pre-portioned snack things (there are these perfect little 100 calorie Stella D'oro breakfast treats prepackaged); I know it's more expensive that way, but my ability to self regulate seems to be a bit out of whack lately. Too much going on, as you guys all probably can relate to yourselves. Case in point, Roddy's day off that's not a day off.....

Not rubbing salt into the wound, but that STINKS..

Wow, Annie. This is great. If this is what it takes, well, then I guess the treatments will be very worthwhile..

I think I may dash out after cleaning up the dishes and a quick breakfast (definitely a coffee morning). It's supposed to be relatively warm (maybe 50s) and could be a good day to run at the beach. Will feel nice to finish up the program with a bang and a run outside today. Will I do it?.

I'm going to have two goals this week...I want to drink 8 glasses of water every day (instead of the usual 1 or 2) and keep on the unhealthy snacks with the kids I babysit everyday-I wanna reach the 11 pounds lost mark!..

Ugh...just found out one of the guys in my office (it's a VERY small officeonly about 20 employees, and despite the stress, it's sort of like family) is basically dying. He's been fighting pancreatic cancer for the past three or four years, seemed to have beaten it after surgery. I even saw him play a gig (he's a great guitarist) in August..

Then he had a relapse around Christmas and now he's going to be spending the rest of his time at home with hospice care. I'm sitting here bawling my eyes out; so glad DH isn't home. He's not so good in those kinds of situations. Obviously, I'm not either. I'm trying to decide to go visit my friend or just keep my last memory of him (with guitar in hand and big smile on his face). Selfish, I know. I feel horrible...

When my cousin was dying of pancreatic cancer, we did go visit her which was good closure for all of us. We thankded her for all of the wonderful dinners, laughs, family outings, and what an honor it had been to have her in our lives. Too be honest, she actually looked beautiful...

Greek Lasagna.

A light, vegan lasagna made with artichokes, eggplant, and lemons..


4-6 artichokes, trimmed.

1 eggplant, cubed.

2 T olive oil.

Large red onion, chopped.

2 carrots, diced.

1 c tomato sauce.

Salt and pepper.

8 oz lasagna noodles.

3 c chickpeas, soaked and cooked or canned.

3 cloves garlic.

2 T cornstarch.

1/3 c parsley.

1 c vegetable stock.

C dry white wine.

1 T tomato paste.

1 lemon.

4 t flour.

1 c bread crumbs.

Directions There are four main ingredients for this lasagna: vegetable mixture, lemon sauce, noodles, and chickpea mixture. They are numbered here to help you stay organized..

1. Boil a large pot of water over high heat. Add artichokes, bring to a boil, lower heat to medium, and simmer for 30-40 minutes, until tender and a tugged leaf comes off easily. Remove the leaves (reserve to eat separately) and choke so that you're left with the artichoke hearts - set aside..

Meanwhile, bring water to boil in the steamer, add eggplant to basket, cover, and steam for about 6 minutes, until just tender. Set aside in a bowl..

Heat 1 T oil in frying pan over medium heat. Saut the onion about 4 minutes, until translucent. Add carrots, cook 3 minutes, cover, slower heat, and cook for 5 more minutes..

Combine artichokes, eggplant, onion/carrot mixture, tomato sauce, salt, and pepper. Set aside..

2. Meanwhile, in the small saucepan, combine stock, wine, and tomato paste and bring to a boil. Reduce heat, half cover, and let simmer for 10 minutes..

Grate the lemon skin for zest and juice the lemons (discard seeds)..

Heat remaining T olive oil in non-reactive saucepan and whisk in the flour. Cook for 2 minutes, then whisk in stock mixture, lemon juice, and lemon zest. Cook for 1 minute, whisking constantly..

3. Meanwhile, cook the lasagna noodles in boiling water..

4. Drain the chickpeas and reserve the liquid. Place chickpeas, garlic, and cornstarch in the food processor and process until smooth. Add enough liquid to make mixture creamy and spreadable - - c or so. Add parsley and pulse until finely chopped..

Preheat oven to 375..

Put a few T of lemon sauce into baking dish and arrange a layer of noodles on top. Spread with half the vegetable filling and press it down lightly. Add another layer of noodles, then all of the chickpea pure, the remaining vegetable mixture, and another layer of noodles. Pour the rest of the lemon juice over the top and cover tightly with aluminum foil..

Bake until very hot, about 50-60 minutes. Uncover and sprinkle with bread crumbs. Turn the heat up to 500 and bake until bread crumbs are brown, 7-10 minutes. Let stand for 10 minutes, then serve...

I LOVE all of the ingredients and will ponder when I can make it. Just got back from the grocery store about an hour ago, but I don't have all of the ingredients on hand at the moment. Another variation on vegan lasagna has GOT to be a good thing. It's wonderfully portable and great to bring to work for lunch. DH seems to like it too, although I think eggplant sometimes makes his throat itchy. Allergic reaction, I guess.
