PB2/Chocolate Muffins.

1 pancake mix, mixed as directed.

Add:.

1 Tbsp baking powder.

2 splenda packets.

2 tsp PB2.

1 tsp SF hot cocoa mix.

2 tsp FF milk (in addition to the 1/3 C for the mix).

Thanks for the suggestion. This sounds really good. I don't have SF hot cocoa mix, but I bet just plain baking cocoa would work. Can't wait to try it. This would be a great fix the night before and take to work breakfast too! Thanks again!.

Goodness gracious ... I had left out the baking powder by mistake ... have amended with my forgetfulness!.

Since the hot cocoa is sweetened ... you might have to add a little more sweetner for the cocoa ... I thought about it, but didn't want to figure out the sweetner add in..

What would be great if you don't have the SF Cocoa is one of the Splenda Mocha Flavor packets...

Betty what's BP? Have to put that on the Abbreviations thread...

Great idea about the Mocha Splenda, Betty ... tomorrow I'm going to try out using SF strawberry jam ... in my mind it sure sounds like it'd be good!..

PB2 is Powdered Peanut Butter that has had most of the fat removed. Lots of people here use it. You get a lot more than the measly 1 tsp. of regular Peanut Butter..

Here is a link to the site.

Most people have to order it online, but some have said there are stores near them that have it. It's awesome and you will find a lot of posts about things to do with it...

Thanks so much. I thought maybe it was peanut butter. Does it taste very good? I absolutely love my peanut butter in the evenings with an apple or banana..

Na...

I think it's better than regular peanut butter. Some don't. I love to add things to it. My favorite thing lately is to add Mocha Flavor Splenda to it with the water and eat it on an Apple...

While nothing compairs to my beloved peanut butter, PB2 is very good. I found that I needed to mix it a lot so that it's more creamy and theres no texture, but the taste is great...

And once it's cold it is just as yummy as it''s fater sister...JIFF! Oh wait..Skippy!!..

The muffin recipe sounds good. I just bought a puff pan and these would be good to make in the puff pan. I'll be trying it this week..

I love to cook and experiment so I made crepes this morning......so good.....I just take a pancake mix, added an egg....and water instead of milk and beat it up good so it is runny....then cook in a crepe pan or on a large stick free fry surface.....roll some chopped strawberries, blueberries, or Polemer all fruit in them , put on your plate add drizzle sugar free syrup ....yum.....also they make good base for your fijyitas......and made the regular way you can save and have as toast or for a sandwich for your chicken or hamb........

Just a heads up....

1 Tablespoon of baking powder has 1463 mg of sodium. That would be in addition to the sodium in the pancake mix which is 290 mg..

You can check out the stats for baking powder and lots of other food items here:.

I was wondering if she meant 1 tsp. of Baking Powder when I read that. It seems you don't need a full TBSP. for such a small recipe, right????? Maybe she can clarify that for us, whether she used the TBSP or a Tsp...

I actually did use a tablespoon ... it didn't taste off ... I'll try next time for 1 teaspoon. goodness ... I'm so new at trying out a recipe...

I am sure it is fine. The only thing is that it really has a whopper dose of Sodium. I used your recipe in the Puff Pan I bought today. I made a mess of them, lol, but your recipe was great...

I'm so sorry you made a mess ... I wasn't brave enough to try the Puff pan yet ... and the muffin tin was quick and easy! Try, try, try again!..

This morning I made this recipe, but in a little glass bowl and turned it into one big ole muffin. Awesome. It was huge...

Betty ... how long did it take to cook it in the glass bowl?..

I did it for 2 1/2 minutes in the microwave. That might have been just a touch too long. But I have a wild powerful nuker. I am going to do it again tomorrow..

2 tsp FF milk (in addition to the 1/3 C for the mix).

The new pancake mix I believe is 1/4 c not 1/3 so would it still be 2 tsp in addition? also what does this count as? entree plus 2 free foods (pb2 and hot cocoa mix)?.
