Got a question... How does a person gain weight after Surgery? The Dukan Diet must be in Fluids!? Thanks in advance for any response. Another question I got... OMG I have made the perfect muffin. I make every weekend ShoShun's chocolate muffin recipe, though in the past several weekends I have added minced walnuts (fat) and a T of PB2...today I did something different and I think it's to die for. I made the recipe and spooned a spoonful into the muffin tin...in a separate dish I made up a portion of PB2...just a T with only enough water to make it mixed through but more on the dry side so it wouldn't run.

What I got was a chocolate chip nut muffin with a peanut butter surprise center. REALLY GOOD..

1 pack Dukan Diet chocolate chip pancake mix.

1/3 c chocolate soy milk (you can use skim milk and add a squirt of FF chocolate syrup.

1 pack Splenda.

1/4 t vanilla extract.

1 T minced walnuts.

1T Hershey's cocoa powder.

1 tsp PB2 with water.

Pam muffin tin, I make four muffins from this recipe...Bake at 400 degrees for 10 min..

This counts as entree, 2 free foods (cocoa and PB2).

You still need to add your protein, though you could make a full portion of PB2 and that would count as your protein, and a fruit.

It's the perfect weekend breakfast...and you're eating FOUR muffins....heaven, shear heaven..

Cathy.

I'm now making two muffins out of the mix...it makes two substantial muffins and I'm in love...every Saturday and Sunday, this is my breakfast. love it...

Gee where have you been living, under a rock...lol...do a search for PB2...you'll get more threads then for any other subject, I would bet. It's a powdered peanut butter that you mix with water and it tastes as good as the real stuff but is 75% fewer calories and fat. It's great and you can use it as a protein...say 2 T PB2 plus 1T water mixed up and served with an apple for your afternoon snack or 1 T with 1/2 T water and it's a free food. It's the best. You have to order 4 jars of it but trust me, you'll whiz through them in no time...I'm just about to start my jar 3..

Cat, just had the muffins you recommended yesterday. They were wonderful and so filling..

I don't have pb2, so used 1/4tsp Real Peanut Butter(TM) on top of each muffin..

I wasn't sure whether to use mini muffin tins or regular. Used regular but didn't have enough batter to put another scoop on top of pb. So pb just sat on top, but as the muffins rose, the pb formed a little crater in the top..

Next time I'll try mini muffins. Another time I'll use regular size again, but make each muffin twice as high, making only 2 huge ones since they didn't rise way up above the cup. Love those muffin tops, you know! I never would have guessed that this recipe was made from pancake mix! I NEVER would have believed that all 4 muffins and cold milk with 'em were legal. And I still have a fruit waiting for later as I was too stuffed to fit it in for breakfast..

Thank you..

PS, like "wannabe" I guess I've been under a rock too, as I haven't been curious enough about all the pb2 comments to research it. Had just bought 2 jars of natural pb before starting NS, and am now hoping to get through them before the end of the year when they expire. Used to fly through them, but now at a tsp per day, they will last a long time. It's all about portions!.

Thanks again for a delicious breakfast idea...

Wannabe, Welcome to NS..

I see that was your very first post. I'm only 2 months into the program. It is still really fun planning each next meal, juggling the possible foods and options. AND seeing the progress!.

I have one sister in Va who is a veteran NSer and has really set an example for the rest of the family. My husband and I are in SD and enjoying the program together. My other sister is in upstate NY and just joined last week. So our summer reunion in Va will be all about our progress and sharing ideas..

Enjoy the boards. There is real support and humor on here..

And good luck with your journey!..

Judy, glad you liked them...aren't they the BEST!!!! I originally started with the mini muffin tins and got SO many, it was fun to just sit there and gorge and it was all legal...I use the regular size muffin tins but don't fill to the top...it still makes a good sized muffin...you'll get used to how much to put in to get whatever effect you want. I've also tried the entire mix into one large pyrex cup and it was like a mini cake...really good but I love the idea of eating LOTS of muffins. Next time get that PB INTO the muffin...you'll love it..

Hi Cathy! I made the muffins this morning but didn't make them chocolate. Also I just ordered my PB2 today so I used just a little regular PB in them. I made 2 regular size muffins. Oh my, there were super delish! Now I need to make them again and make them chocolate and use the PB2. Thanks for posting. Did you check out the recipes on their website? Christina Gray has 2 recipes on there..

It's a powdered peanut butter that you mix with water. Take 2 tbsp and add one tbsp of water to rehydrate it and it makes one tbsp of peanut butter. It's only about 54 cals (I think) a serving and about 2g fat. It also has over 4g protein in it. You have to buy 4 jars. You can check it out here:.

(Sorry you'll have to copy and paste).

I did make these muffins using regular pb because I haven't got my PB2 yet and they were excellent..

Wow they sound excellent! I'm new, and still can't believe what people are making these greats new dishes from!..

Thank you Cathy! I made the muffins tonight and my sweetie couldn't wait and had one as they were coming out of the oven. I had a taste and they are FABULOUS! I was able to make 2 huge muffins for each serving. I left out the walnuts, added 1/2 tsp of PB2 in the middle of each one..

Sheer heaven, I can't wait to have them in the AM! ~Nancy..

This sounds wonderful..

Can you tell me what is the advantage of of PB2 over natural peanut butter?..

Birdie.

Pb2 has 55 calories per reconstituted tablespoon (2 tbs dry + 1 tbs water = 1 tbs reconstituted) versus roughly 100 cals per tablespoon for "regular" peanut butter, since it has about 1/4-1/3 the fat content of the regular stuff... it IS peanuts, just without most of the fat....

Basically pb2 is what you get when you press all the peanut oil OUT of peanuts (to make peanut oil sold separately - lol) it's pretty much like dry peanut "flour", that, when mixed with water has great peanutty taste and very little fat.

Sounds great!! I was just reading about it and saw that...

Birdie, I wanted to tell you about another brand called "Better'n Peanut Butter". I love the "Better'n" if I want some pb by itself (on apples, celery etc.).

You can find it at Whole Foods..

2 Tbs per serving.

100 calories, 20 from fat, no trans fat.

2.5 g fat per serving.

4 g protein.

190mg sodium.

13g carbs.

2g sugars.

PB2 is excellent for cooking and baking b/c you add water (or milk) to it and you can make it as thick or thin as you want. So good for thai peanut sauce! But, I don't love it spread on foods as a stand alone..

Have fun! ~Nancy..

Thank you very much Zuzuspetals. I will look for it too...
