Quick question... How do I find out how many points I should be eating on Nutrisystem? Thanks for any answer or 2. My 2nd question... Does anyone have the recipe for this? Cauliflower that taste like mashed potatos..

That's a good question. I'm not sure what is the answer. I'll do some poking around and get back to you if I find an answer. You should email the people at Nutrisystem as they probably could give you help..

In a fry pan, squirt ICBNB saut 1/2 onion and 1/2 green pepper until soft. With meat mallet, smash the contents of a small package of slightly thawed cauliflower. Microwave for about 1 minute, then added to fry pan, add some salt, pepper and paprika. Turn heat to high so the edges get brown and crispy, serve next to scrambled eggs..

"Mock" Jalepeno Mashed Potatoes.

1 medium head cauliflower.

1 Tbs. fat free cream cheese.

3 Tbs. grated parmesan cheese.

1/2 cup chopped jalepeno's.

Fresh ground black pepper to taste.

ICBINB spray for taste.

1/2 tsp. minced garlic (use instead of jalepeno's for garlic mashers).

Clean, cut cauliflower. Cook in boiling water for 6 minutes or until tender. Drain well (do not let it cool), dry with paper towels. Puree hot cauliflower with other ingredients in a bowl with a immersion blender or in a food processor. Add pepper and butter spray to taste.

Roasted Cauliflower.

Author: Spuffed1 Date: 07/23/05.

1 bag frozen cauliflower.

2-4 Tbs. chopped garlic.

2 tsp. olive oil.

Original Method - Preheat oven to 500 degrees. Defrost cauliflower in a bowl of water for 20 minutes or so. Drain. Lay cauliflower on paper towels and squeeze out as much water as possible. Mix ingredients and salt & pepper in a bowl or plastic bag. Spray metal pan with cooking spray and poor in bowl contents, spreading cauliflower out.

Pull out after 10 minutes and stir contents for even browning. Stir again after another 5-6 minutes. Take out of oven and sprinkle with more salt and enjoy..

New Method - Place frozen cauliflower in non stick frying pan over med. high heat. Cover with lid and stir every 2 minutes. After 5-6 minutes, remove lid and add garlic and oil and brown at med. high heat for another 5 minutes until browned nicely. Sprinkle with salt and pepper and enjoy! This still tastes great reheated the next day.

Ruby Tuesday's Creamy Mashed Cauliflower.

1 head cauliflower, cut into florets.

3/4 cup water.

1 Tbs. corn starch.

1/3 cup heavy cream.

1 tsp. granulated sugar.

3/4 tsp. salt.

1/4 tsp. white pepper.

1/8 tsp. garlic powder.

1/8 tsp. onion powder.

Divide a head of cauliflower into florets that are all roughly the same size. Steam cauliflower pieces over boiling water for 15 to 20 minutes, or until the cauliflower is tender. Drain the cauliflower and toss it in a bowl of ice water to bring the cooking process to a screeching halt. When the cauliflower has cooled, put the florets in a food processor along with 1/2 cup of water. Puree the cauliflower on high speed until smooth, but with some very small pieces of cauliflower remaining in the mix for just a bit of texture. Pour all of the pureed cauliflower into a medium sauce pan.

Add the cream, salt, white pepper, garlic powder and onion powder to the cauliflower and stir. Set the saucepan over medium heat and cook, stirring often, for 5 to 10 minutes, or until thick. Makes three 3/4-cup servings..

Here's my cauloflower potato recipe. Just use low- or nonfat products and skip the bacon and it will be Nutrisystem friendly. I never add the bacon..

Thank you so so much for posting this recipe. I honestly was very leery of it but have been bored with my veggies lately so I tried it last night.. OMG it's awesome! Can't wait to have it again and again...
