FF cool whip! or FF cool whip with some PB2 mixed in..
If you want a super easy one that's light and fluffy, just mix one of the chocolate SF pudding cups with ff cool whip. It's wonderful on cupcakes!! In fact I have a picture of it that I"ll grab and post to show you!.
Also if you like peanut butter I use the cool whip mixed with PB2 to top my peanut butter pie and it's wonderful too!..

Jumbo Chocolate Cupcakes.
1 2/3 c baking mix (preferably whole grain).
3 scoops ANY WHEY protein powder.
2 c Splenda.
4 tsp Wheat gluten.
C Hersheys baking cocoa powder.
1 small package SF and FF Chocolate pudding mix(cook and serve).
1 tsp salt.
2 tsp baking powder.
Tsp baking soda.
2 c Hood Brand Calorie Countdown Chocolate milk.
C cottage cheese.
C egg beaters.
C sugar free applesauce.
2 tsp vanilla.
Preheat oven to 350. In a large bowl, put all dry ingredients and stir well with a whisk to break up any lumps or you can sift it. In a blender place the cottage cheese and half of the chocolate soy milk and blend until smooth. Add and remaining wet ingredients to the dry and mix well until blended. Using a c measuring cup, place batter into jumbo muffins tins that have been sprayed with cooking spray. Will make approximately 12 muffins.
Bake Jumbo tins for 20 minutes..
12 muffins @ 153 calories and 9g protein.
24 muffins @ 76 calories and 5g protein.
ALSO: these are much better the next day or once they have totally cooled!..
Well...March 7 is my birthday too! I know what my dessert will be too! It's going to be:.
Angel Lush Cake.
1 small pkg SF/FF Jello vanilla instant pudding and pie filling.
1 can (20 oz) crushed pineapple in juice, undrained.
1 cup thawed Cool Whip Free whipped topping.
1 angel food cake prepared (dont buy already made!!! Bake it yourself, it's easy!).
10 whole strawberries.
Mix pudding mix and pineapple in medium bowl. Gently stir in whipped topping..
Cut cake horizontally into 3 layers..
Place bottom cake layer, cut side up, on serving plate. Spread 1 1/3 cups of the pudding mixture onto cake layer; cover with middle cake layer. Spread 1 cup of the pudding mixture onto middle cake layer; top with remaining cake layer. Spread with remaining pudding mixture..
Refrigerate at least 1 hour or until ready to serve. Refrigerate leftover cake..
Garnish with 10 whole strawberries for a splash of color..
Total fat: 1g..
