I'm thinking somewhere there is a culinary school training somewhere in her past (which would be a wonderful thing) because her food ALWAYS looks wonderful and those items I've been able to make already have ALWAYS tasted wonderful as well...
I am completely self taught by watching a LOT of FoodTV a few years back.... so, I am really not cooking for a very long time, but I always liked good food. Now I just try to also make it skinny... mainly inspired by christina gray on the scrumptious/skinny part..

I live in the Midwest and have never heard of Krusteaz. Is it the same as Bisquik?..

Krusteaz is somewhat like Bisquik. I believe, but since I don't have it in front of me can't be positive, it has a bit more fiber and protein than Bisquik. But basically it is another pancake mix - you just want to use what you can find and try to get one that has as much protein, fiber and lowest fat possible. When I use one of these mixes, I usually add 1 TBSP of AnyWhey (protein), which adds about 23 cal and 6g protein. If you don't have AnyWhey (netrition.com carries it) add 1 TBSP of soy flour - doessn't add as much protein but it does help a bit..
I too love when "Skinny_Jns" posts her recipes - they are very creative and look wonderful. The ones I have made have tasted like heaven - she gets a great big GOLD star from me..
I also know that Chris's cookbook should be ready for "mailing" in about 3 weeks or so. She just got the new proof of the cover (which she really loved much better) and sent it off for production earlier this week. I can't wait for it to be in her hands and then shortly into mine..

I made this yesterday. It was very good. I made it in two pans because I could tell it was going to be thick. That way I could have one now and one later..
I used Aunt Jemima Whole Wheat pancake mix. It had more fiber than the Krusteaz mix my grocery store carries..
