I know that Christina Gray posted her really yummy looking "Spaghetti Squash Cassarole" and "Cheesy Spaghetti Squash Bake" pictures not too long ago, but I can't find the recipes! I bought a spaghetti squash and need a recipe! Can anyone help me with a yummy, Nutrisystem friendly (of course) recipe using spaghetti squash? Thank you.

I'm stumped. I'm not so sure what is the answer. I'll do some poking around and get back to you if I got an answer. You should email the people at Nutrisystem as they probably know..

Hi Katie!! Here's this one. I think I put them all here, but it only goes back like 2 pages so you have to adjust the settings to show more pages. I also have all of my recipes on my recipe board. There is a link to it in my signature..

Cheesy Spagetti Squash Bake.

1/2 spagetti squash cooked.

1/4 C light ricotta cheese.

2 tbsp parmesan cheese.

1 tsp dried parsley.

Salt and pepper to taste.

1/2 tsp garlic powder.

1 tbsp egg beaters.

1/2 c Boca ground beef crumbles.

1 c spagetti sauce or marinara sauce of choice (see note below).

1/4 c ff mozzarealla cheese shredded.

Spray a large single serve cassarole dish with cooking spray. Season the cooked squash with a touch of butter spray or olive oil spray and salt and pepper if desired and put it in the bottom of the dish. In a small bowl, mix together the ricotta, parmesan, parsley, salt, pepper, garlic and egg beaters and mix to combine. Drop this on top of the suash. Top with the boca crumbles (60 cals and no need to thaw) then top with enough sauce to cover. I used about a cup.

Top with cheese and pop back in just until the cheese melts..

NOTE: This made so much and was so filling that I only ate half of it for lunch. This would also make a wonderful dinner and one the whole family could eat if you made more..

Another note: For the sauce I didn't have pre-made sauce on hand so I just used a can of crushed tomatoes and seasoned them up. It worked great!!.

Hi there! I just wanted to say that I have tried the recipe above (Christina Gray's) and it is sooo good!!! There is also one over on the recipe section here as well that you use with the rotini entree, it's good too!! Anyway, good luck, hope those work for you! Take care, Sheila..
