My question is Does Nutrisystem on line works or is better to go to the meetings? Many thanks for any answer. My other question... I had the BEST veggies last night! I mixed cauliflower, broccoli, zucchini slices, summer squash slices, and red onion rings with some chopped garlic, thyme, salt, and pepper. Then I put some parchment paper on a cookie tray, spread out the veggies, sprayed them with a bit of olive oil cooking spray, and roasted them ( 400 degrees for 40 min). They were soooo delish!..

Ye, although you might wanna make sure and wait for someone else to confirm my answer as I am not very confident. Better yet, why don't you e-mail the Nutrisystem guys because they can help better...

That sounds delicious. A couple nights ago I marinated mushrooms, zucchini, onions, and peppers in ff italian dressing overnight. Then I grilled them over mesquite charcoal. Yummy...

You're right, Vickie. Roasted broccoli (in the oven or on the grill) that was simply tossed in a little balsalmic vinegar and salt tastes like you did something really special. Yummy!!!..

Here's my recipe:.

Pre-heat oven to 450 degrees..

Any veggies you like, cut into roughly uniform sizes. I use asparagus, zucchini, baby carrots, yellow squash, and onion, typically..

Fresh rosemary, chopped very fine.

Fresh thyme.

Kosher salt.

Fresh ground black pepper.

Pam Olive Oil Spray.

Make sure veggies are very dry (I use paper towels). Place in large zip top bag with herbs, salt and pepper (I never measure - just until it looks like a good mix). Spray several times with Pam, close bag and shake. Repeat once or twice to make sure the veggies are coated with Pam, herbs, salt and pepper..

Place on a cookie sheet or baking pan. Roast in very hot oven for 20 minutes..

Roasting them this way gets you a nice brown outside without making the veggies mushy..

And now for the best part - the next day with leftovers. Take a can of fire roasted, diced tomatoes and drain very well. Put leftover veggies in food processor with tomatoes. Pulse two or three times to get a chunky salsa consistency. Serve over FF cream cheese with raw veggies (better with full fat cream cheese and crackers, if you're doing this for a party or some other non-NS event). MMMmmmmm.....

Hello all, I'm new just started the diet 2 weeks ago. And I am becoming more encouraged after reading about how to do some of the veggies. I have trouble getting them in some days because I get bored with them. But roasting them sounds WONDERFUL. Thanks for the tips...
