I tried the breadcrumbs thing last time and they really didnt stick, so I was going to try the pancake mix this time. now what to have for dinner with it.. hmm. anyone have any insight about how much pancake mix you use? 140 cals is A LOT..
I use baking mix with the bread crumbs, parmesan cheese and the spices. The whole idea is that not alot of it sticks! That's why people don't much bother to count it because only maybe a tbsp or so even sticks to the zuchinni or onions depending on what you're using. If you don't like bread crumbs then you can use just the baking mix and spices. I wouldn't use pancake mix because it would be slightly sweet, but if that's what you want to use then just put some in a baggie and shake. If you want to know an exact ammount that is used then measure it before it goes into the bag and then measure what's left when you're done. It will vary each time you use it based on how much egg beaters you use and how big the veggie is, etc...
It is what it is. Some people love them, some probably don't. For me it's a great alternative and a much healthier one, but it certainly isn't a Mc D's fry!! LOL!!..

I made them last night actually I juse egg beaters and bread crumbs and actually the bread crumbs stick pretty good and like Chris said I have the oven high and mine were crunchy!!!! YUMMY..
