Quick question... Do you know of any cook books for candida Dukan Diets but which also excludes WHEAT? Thanks in advance for any comment. My other question... I am no chef and apparently not very food creative, so, that being said: a request to all you cooks out there:.

Anyone ever had the mashed cauliflower at Ruby Tuesday's? Can any suggest a Dukan Diet rendition of them?.

I'm stumped. I'm not so sure what is the right answer. I'll do some poking around and get back to you if I find an anything. You should email the people at Dukan Diet as they probably could help you..

There's a recipe for the Ruby Tuesday mashed cauliflower in my Veg file I'd use fat free 1/2 & 1/2 instead of the cream and Splenda instead of sugar otherwise, I'd think most of the ingredients should work to a veg + 1-2 free foods in the serving size noted by The-Jazzman (cornstarch is 30 cal per tbsp, ff 1/2 & 1/2 is 10 cal per tbsp, making 1/3 cup around 50-55 cal, so 1/3 is around 30 cal added to the veg) and in you have 1/2 cup instead of the 3/4 cup which is noted in the recipe, then you'd have roughly 4 svgs in the recipe and each would be a veg + free food by my calculation.

Ruby Tuesday's Creamy Mashed Cauliflower.

1 head cauliflower, cut into florets.

3/4 cup water.

1 Tbs. corn starch.

1/3 cup heavy cream.

1 tsp. granulated sugar.

3/4 tsp. salt.

1/4 tsp. white pepper.

1/8 tsp. garlic powder.

1/8 tsp. onion powder.

Divide a head of cauliflower into florets that are all roughly the same size. Steam cauliflower pieces over boiling water for 15 to 20 minutes, or until the cauliflower is tender. Drain the cauliflower and toss it in a bowl of ice water to bring the cooking process to a screeching halt. When the cauliflower has cooled, put the florets in a food processor along with 1/2 cup of water. Puree the cauliflower on high speed until smooth, but with some very small pieces of cauliflower remaining in the mix for just a bit of texture. Pour all of the pureed cauliflower into a medium sauce pan.

Add the cream, salt, white pepper, garlic powder and onion powder to the cauliflower and stir. Set the saucepan over medium heat and cook, stirring often, for 5 to 10 minutes, or until thick. Makes three 3/4-cup servings...

I think it's in the South Beach Dukan Diet recipes.........a friend made it for me a long time ago that was on South Beach..

Ff cream cheese will give them a thicker, richer flavor with less calories than the heavy cream - I always add garlic to them as well. Yum...

I usually add some ff cream cheese and a wedge of garlic & herb laughing cow lite cheese...

I add a laughing cow cheese wedge, some ff milk and a few squirts of ICBINB..

What does the laughing cow cheese count towards? Oh! And how much raw cauliflower do you start out with for your serving? THANKS for all the suggestions...dang I really want some now! LOL..

I know I am the question queen, but in addition to my previous questions: "What does the laughing cow cheese count towards?" and "How much raw cauliflower do you start out with for your serving?".

How do you count the FF cream cheese as well?.

Well the laughing cow cheese is 35 cals per wedge, so depending on how much cream cheese you use I would count the two together as the protein serving or partial protein..

14 cals and 2 grams of protein are in 1 tbsp. of fat free cream cheese, so if you use two that would be 30 cals and 4 grams of protein, plus the 35 cals from laughing cow and 2.5 grams of protein would put you at 65 cals and 6.5 grams of protein total..

A splash of ff milk to mix it would probably give you the missing .5 grams of protein with out going over 100 calories...

Ok, per Graylady's recipe and stats posted, and what I looked up online using the Kraft and Calorie King websites, this is what I came up with:.

Counts as 1 veggie + 2 free foods per serving.

1 medium head cauliflower, cut into florets (144 cal/.6g fat/11.4g protein) = 36 cal/serving.

3/4 cup water.

1 TB cornstarch (54 cal/0 fat/0g protein) = 13.5 cal/serving.

1/3 cup FF cream cheese (90 cal/0g fat/12g protein) = 22.5 cal/serving (had called for heavy cream).

1 tsp. granulated Splenda (had called for sugar).

3/4 tsp. salt.

1/4 tsp. white pepper.

1/8 tsp. garlic powder.

1/8 tsp. onion powder.

I use the BirdsEye Steam Fresh garlic cauliflower, FF cream cheese and chives. Top with pinch of FF Cheddar cheese for color. VERY YUMMY!!! :-)..

Actually, wait, I think I got this:.

To answer myself, and for all of you to laugh at me and my slow learning I'm cool with that, you could only have.

1 serving.

Of this to count as your veggie (even though it's at 36 cals v 25 cals) because you would go over on the cornstarch and FF cream cheese as being free foods (2 servings would make each >20 cals each)!.

I think I got it, and this will be a yummy 1 veggie for tonight..

I got this from "The Biggest Loser" Boards, and it was WONDERFUL, with only a slight variation!.

1 large head cauliflower.

1 Tbsp butter.

2 cloves garlic, chopped.

1 tsp salt.

In a large pot with a tight fitting lid, steam the cauliflower for 15 minutes in 2 inches of water. Transfer the cauliflower to a food processor and puree in small batches, until incorporating all the cauliflower. Add the butter, garlic and salt until it reaches a smooth, creamy texture..

Prep time - 25 minutes.

Servings - 3.

Nutrition Info:.

Calories - 100, Protein - 6 grams, Carbs - 15 grams, Fiber - 7 grams, Fat - 4 grams, SFA - 1 gram, MUFA - 1 gram, PUFA - 2 grams, omega 3 - 0.4 grams, omega 6 - 0.8 grams.

***** I steamed the garlic in with the cauliflower, and only used 1 tsp of low fat margarine, and it was YUMMY!!!!!! So good! I think that I will make this tomorrow night, thanks for the reminder!!!!!!!!..

(Hi - I'm new...just jumping on in like I've been here forever! Haa!!).

I've always put laughing cow in my mashed cauli. or sometimes, even a scoop of whipped cream cheese (before Dukan Diet - now of course, I'll measure and research portion/calories). I will also boil the cauli. in low sodium chicken broth for added flavor. Never thought to add splenda. I like my sugar from the source - chocolate!!.

I do find, however, that eating cauliflower makes me a little, ahem, gassy. I always take a beano before!!..

Had mashed cauliflower tonight - measured 2 cups raw...then cooked well in microwave - mashed it & added LC cheese & splash of FF milk while mashing - some pepper and some ICBINB squirts...was delicious..
