Can we use a veggie serving in pace of a salad serving fairly long term and be safe? I too am just about over all the salads and I like them - but I need more variety and I don't like normal "salad" veggies. I like hot veggies (I ad no salt, no butter at all just steam them - that can't be too bad right????..
I get tired of leaves real fast, and I like Romaine and baby spinach. I've been cutting zucchini, celery, cucumbers, anything "firmer" into sticks and dipping in the f.f. salad dressing. If you have liked cheese, in the past, you could grate some butternut squash into your salad. It looks like cheese, and helps sometimes...
I have sometimes saved my fruit serving from breakfast and sliced up some strawberries to put on my salad. Works with other fruits too. Especially good if you are just using a low-calorie balsamic dressing..

Marinated cucumbers - I just peel and slice a whole cucumber, then add sliced onions (how much? ummm.. depends on my mood). I put them in a shallow bowl (so that they won't be stacked high). I pour just enough red wine vinegar in the bowl to almost cover them. Add a packet or two of Splenda (again, depends on my mood). Cover and shake to make sure all are moistened..
Sometimes I fix this right before I eat (fix the cukes then prepare the rest of the meal or heat my Dukan Diet while the cukes marinate in the fridge). But it's best if I do this at night and let them marinate overnight - take to work the next day for lunch. I usually eat about 1/2 to 1/3 of the mixture as my "salad" - again, depends on my mood..
I really like to fix enough for several days - then it gets better as it marinates longer...
I like to use a protein and throw a hard boiled egg in my salad at lunch. Trader Joe's sells ready made hard boiled eggs so it's super easy. For dinner I usually crush up walnuts (as my fat) and throw it in my salad for some crunch. But I understand what you mean, sometimes I feel like a rabbit with all of the lettuce..
My favorite salad is: 8 shrimp sauted with spray oil, lemon pepper, and a splash of V8 at the end, organic baby spinach (I chop it into smaller pieces), tomato, cucumber, ff feta, walnuts and pumpkin seeds, bell pepper, carrots, celery, and shredded red cabbage. Sometimes I'll add a couple canned artichoke bottoms, and I like to use Walden Farms Russian dressing..
Shredded cabbage/green onions/celery and chicken (lunch protein) and Paul Newman's LF Ginger Sesame dressing. Or shredded cabbage/green onions/celery/cucumber, ff feta cheese shrimp (protein) and ff Italian dressing. I usually go through a bag of shredded cabbage a week. Then I have the more traditional green salad with veggies for dinner (I like to add sliced pickled banana peppers to my dinner salads with ff or LF ranch dressing) When I get totally burned out on salad I have an occassional v-8 or a piece of fruit with dinner, switching around is the key. I marinate cucs in seasoned rice vinegar. I buy it premade/sweetened, so it has 20 cals/T and would count as a free food. But you could probably get the regular, unseasoned, and add Splenda...
Yes, according to the counselors you can substitute veggies for salad. I do that off an on to give me a break because I am not a big salad person. I am going to try the Cucumber Marinade that PSister listed. That sounds good to me..
Lots of times I slice up cucumbers into chunks with some zuchinni, sometimes raw brocolli and spritz it with salad dressing for flavoring. Just watch your calories..
You never have to have one salad doing the plan as long as you replace it with vegetables. For the first 5 or 6 months I was on this program I never ate 1 salad and it didn't effect my weight loss as all - just make sure you replace it with veggies! (It might even be better for you since you wouldn't be adding the additional calories of the no-fat calorie dressing... just a thought.).
