Oh my!!!! The original recipe for this was printed in Woman World Magazine 18 years ago by myself and my sons!!! I mounted the recipe and photo of my sons and have it hanging on my bedroom wall and NEVER thought to use it as a N.S. recipe..
The Original recipe did not use cottage cheese and used canned fruit cocktail. Everything old is new again!!!!..

I think this is the orginal recipe. I use to make it a lot.
1 pkg. instant pistachio pudding & pie filling mix.
1 (20 oz.) can crushed pineapple, undrained.
1/2 c. miniature marshmallows.
1/2 c. pecans, chopped.
1 (8 oz.) carton Cool Whip.
Pour dry pudding mix over undrained pineapple and mix. Add marshmallows and nuts. Slowly fold in softened Cool Whip. Refrigerate 3 to 4 hours before serving. Serves 6 to 8...

I mix sugar-free strawberry Jello mix with a carton of cottage cheese and about a cup of Cool Whip or just enough to keep from adding too many calories per serving, and canned of drained fruit cocktail. I mix all together and chill..
It can be varied with other Jello flavors and fruit. I have also used Light Yoplait in various flavors instead of cottage cheese or added along with yogurt. My cooworker loves it..
You would count it as protein/dairy and fruit and one of the 3, 20 calorie freebies. I like to eat it as dessert or with my meals..

Yummy! I usually hate cottage cheese, but I am gettin kinda bored of same old yogurt. SO I tried this today. I did a little measuring and math and the sugar free/ fat free jello pudding mixes have 25 cal/ 1/4 package(i bought the smaller boxes of pudding). which comes out to be about 3 teaspoons(+ a little bit) but 3 tsps makes the perfect free food amount of 20 cal. It doesnt seem like much but when it gets put in 1/2 cup of cottage cheese it really flavors it nicely. I went a lil crazy w/ buying all the pudding flavors.
Today I had the Cheesecake flavor, it made the cottage chz yummy, I had it w/ crushed pineapple so it was like pineapple cheesecake(kinda), then I put some vanilla extract and a bit of splenda and it is YUMMY!.
I really love that "Watergate" salad w/ the pistachio and cool whip so I got some of that flavor pudding and i'm really looking forward to trying that..
Maybe ill try blending the cottage chz to make it smooth and see how that goes, I think i've seen somewhere on the boards that ppl do that cuz the funky texture of cottage chz..

I mixed the cottage cheese with pistachio in Magic bullet. Made it really smoothe. I should have added a couple spoons of pineapple juice but didn't think of it. Soooo good..
