Crustless Pumpkin Pie by conniejo688.
This is a great afternoon snack..
In a small bowl mix 1 cup of canned pumpkin (1/2 c. = veg/1 c. = fruit).
1/2 cup of egg substitute.
Pumpkin pie spice (if you omit this, use cinnamon & brown sugar Spenda to taste).
Sweetener to taste (Connie Jo used about 3 tsp.).
Spray a small individual baking dish with nonstick spray and pour mixture in it..
Bake at 450 for 20 minutes. Let cool slightly and top with 2 TBLS of SF Cool Whip..
Counts as 1 fruit (or 2 veggies).
1 free food..

Just wanted to mention one I saw on here that I make all the time. 2/3 cup pumpkin (more in line with fruit calories allowed), few packets of splenda, dash of Davinci syrup (i use vanilla) lots of cinnamon, dash of pumpkin pie spice and 2tblsp of coolwhip. Mix all together. Like a light and fluffy custard...absolutely delicious and you don't have to cook it or add egg so you save a protein!!..

This sounds good ........ and it just counts as a fruit and a free serving? I need to try this one! It sounds like something I could take to Thanksgiving dinner for my dessert..

Yes, I have made that one with cottage cheese. I do not even like it but just mix a serving of each together with spices and splena. Not bad at all..
Substitute ricotta for the cottage cheese on the no-bake one - I like it both ways but better texture with ricotta. I love the one with a cup of pumpkin and 1/2 c egg beaters - it is actually in the oven right now...
Would you mind sending me those pumpkin recipes?? I'd really appreciate it. Kids have been asking for pumkin pie and I made a deal I'd make it but it'd have to be something mom could eat too! Thanks!.
My husband made this today. We both like it..
We may be eating this for Thanksgiving. Unless, I can convince my husband to go to Zagara's Bakery Dept. and pick up a Hill & Valley brand sugar free pumpkin pie. It's advertised in "Diabetic Living" magazine. Has anyone ever tried any of their products?.
