I usually add fat free cheddar to them when I get to work. Its not fancy, but it definitely makes them a lot more edible then eating them plain. (I even add the cheese to the Dukan Diet Scrambled Eggs with Chedder- you can never have enough). I also find that I need to be really careful not to add too much water to the eggs, otherwise they are burnt and watery- and just gross...
I heard that making the eggs in the microwave makes them kind of rubbery and gross (I've only made them on the stove). So I've thought about cooking them at night on the stove like I normally would on the weekends (adding veggies & ff cheese) and then putting it in a tupperware container to nuke few about 30 seconds while I'm at work the next day. I haven't tried it yet but I plan on it because I don't have enough time to cook eggs in the morning before work...
I use salsa and hot pepper on everything......eggs are no exception!..
Thank you all so much. I'm actually using a few of your ideas, and we'll see how it goes. I cooked the eggs tonight on the stove, after letting them sit with water for 20 minutes (I find if I let them hang out mixed then the texture is MUCH better)..
I'll have 1 oz of grated ff cheddar and 2 T of salsa tomorrow, and nuke the cheese/eggs for 20 seconds and then add the salsa. I'll let you know if it works out..
I'm looking forward to trying the muffins, too but I just couldn't get myself in the mood to bake this weekend..

On weekends I have a really good breakfast:.
5 slices of vegetarian 'bacon' strips (1 protein serving) crisped in a cured cast-iron pan lightly sprayed with non-stick cooking spray (butter flavored) with Dukan Diet scrambled eggs and cheese... but NOT NUKED!.
I add water to the scrambled eggs and cheese cup and let it soak, stirring a few times, while the 'not bacon' is cooking..
Once the 'not bacon' is crispy, I pour the eggs/cheese mix into the frying pan and fold it over a couple of times as it cooks, making a nice big 'not bacon' egg and cheese omlette! The crunch factor from the 'not bacon' adds to the texture of the meal. Add a serving of fruit, a glass of water and a cup of mocha decaf with 4 Tablespoons of fat-free whipped cream topping (20 'free' calories): you've got yourself a great breakfast!..
It's easy for the weekends. For during the week before I go to work I just go ahead and microwave it until done and then put hot sauce or whatever I want with it (sausage) right in the container with it. Cover with foil and eat it at work after I mix it up with my goodies. It is still nice and warm (However, I only live 5 mins. from work. You could fix it at work if there is a microwave, or fix it before you leave and reheat it. I prefer the scrambled eggs w/cheese entree...
I just nuked mine this morning til they started to puff up to the top of the cup... then mixed in some FF Ranch dressing and 'chopped' them up a bit like scrambled eggs. A little pepper and they weren't bad at all!..
I add a piece of MS sausage and a Tablespoon of bacon bits and some salsa. My favorite breakfast!..
