I've found a sugar free syrup "Cary's" American Diabetes Association's approval. It states that "2 tbsp of Cary's Sugar Free equals a free food". I also used a Nutrisystem recipe for blueberry syryp (use as your fruit serving)...

I love SF Log Cabin syrup. It has a very mapley flavor to it and it reminds me of my childhood. I have a real problem with sorbital and sugar alcohols but for some reason the amount in the SF Log Cabin syrup doesn't effect me..
You can also add the syrup into heated SF jam or fruits to make different syrups for pancakes too..

Thanks everyone! These are all great suggestions...I can't wait until the weekend to try these. I actually like the pancakes so much that I will try to make them and freeze them for the week (I have to be at work at 7:30 and I have to drop my 2 year olds off at daycare first!).

A tip: If you add an egg white it will make the pancakes fluffier...

Here is a recipie for you to try..
Take some peaches (unsweetened in the can) or fresh peaches..
Cook them in some water 1/2 cup of water and stir them while the water is simmering. Add some cinnamom, some splenda sugar (1 +2 packets) add some pure vanilla extract. Let the mixture become thick but not too thick. Remove from the fire and let cool...
Pour over your pancakes. OMG this taste so good....
You could do this with Blueberries, Strawberries, Nectarines, and Pears..
If the Pears are a little over ripe, that is fine, the natural sugars from them will make it taste wonderful. Refrigerate any leftovers for your next breakfast...
